Locust Bean Gum/ Carob Gum (LBG) is a galactomannan vegetable gum extracted from the seeds of the carob tree. This product appears as a white to yellow-white powder, and is often used as a thickening agent and gelling agent in food technology. It has a sweet flavor similar to chocolate, and is mainly used to sweeten ice cream, cream cheese, transparent jellies, and infant formulas as a chocolate substitute.
