1. Cut the cabbage into quarters and remove the cores.

    Cut each quarter into 2-inch strips.

 

2. Put the cabbage and salt in a large bowl.

    Massage the salt into the cabbage until it gets soften. 

    Add water to the cabbage. 

    Put a plate or any type of a cover on top of the bowl and wait for 1 to 2 hours.


3. Rinse the cabbage 3 to 4 times under cold and drain in a colander

    for about 20 minutes. Wash and dry the bowl and set it aside.

 

4. Put garlic, ginger, sugar, seafood flavor and 3 tablespoons water

    in a small bowl and stir altogether until they are completely mixed

    and become paste.


5. Put the cabbage in a large bowl with scallions, radish, red pepper powder, and the seasoning paste.


6. Gently massage altogether until they are completely mixed.


7. Pack the kimchi into a jar and press it down until the brine rises to cover kimchi.

    Leave 1 to 2 inches of headspace of the jar.

    Seal the jar with a lid.


8. Keep the jar with kimchi in it at room temperature for 3 to 4 days to ferment it.

    Check it on a daily basis and you might see bubbles inside the jar.


9. Taste a little and when you think it is ripe enough, place the jar in a refrigerator.

    Maybe you want to eat it immediately but it's best after another week or so.
